Ingredients (makes about 10 popsicles)
Coconut Avocado Popsicles:
2 large ripe avocados, or 3 small ones
4 dl canned coconut milk (shake well before opening)
3 tablespoons honey or agave syrup
Chocolate Topping:
Ca 2,5 dl 70% dark chocolate (chopped)
1,2 dl coconut oil
0,8 dl candied pecans (chopped), can be normal pecans or any other type of nuts/topping of your choice
Instructions
In a blender or food processor, mix the avocado, coconut milk, and honey. Taste the mixture and add more honey if it is not sweet enough.
Pour the mixture into popsicle molds until almost full. Put a layer of foil over the popsicle mold followed by the lid. Insert wooden sticks into the mold.
Let the molds rest in the freezer overnight or for at least 3 hours (until the popsicles are solid.
Melt the chopped chocolate and coconut oil together and stir until smooth.
Unmold the frozen popsicles and dip them into the melted chocolate mixture. Immediately sprinkle chopped pecans or the topping of your liking onto the popsicles. If you want, drizzle some additional melted chocolate over the popsicles. Enjoy instantly or put them back in the freezer until you are ready to eat them.
